BBQ PORK CUTLETS WITH GRILLED PEACHES
2 pkt Otway Pork cutlets
2 tablespoons of oil
Salt and pepper to taste
2 fresh peaches pitted and sliced
2 tablespoons of maple syrup
A scattering of fresh basil leaves
1 pomegranate seeded
Serves: 4 (Or 2 hungry pork lovers)
Remove Otway Pork cutlets from refrigerator, allow to stand at room temperature for 30 minutes or so.
In a bowl mix maple syrup and olive oil well, lay peaches in mixture and set aside
On a hot BBQ grill, place cutlets on the hottest part of the BBQ and cook for 2 mins.
Move to medium heat and cook for a further 3-4 minutes on each side. Set aside to rest.
In the meantime, in a hot frying pan, cook the peaches in the maple syrup juices turning regularly for about 2 mins or until lightly golden
Arrange cutlets on serving plate with peaches, scattered basil leaves and pomegranate seeds.
Season with pepper.
Serve at once.
