4 Otway Pork Cutlets

2 tablespoons extra virgin olive oil

1 tablespoon of butter

1 tablespoon of fresh thyme leaves

Salt & pepper – freshly ground

Serves: 4

Step 1

Thoroughly clean exposed bones (french) to remove excess fat and sinew.

Step 2

Heat a large heavy-based frypan on a high heat. Add oil and butter. Once sizzling hot add the chops. Add the thyme and season with salt and pepper. Cook for about 4 minutes on each side.

Step 3

Allow to rest for a few minutes and serve. Pair with a fresh green salad or veggies of your choice.
