- 1 x Otway Pork loin
- 3 tablespoons salt
- 2 x spring onions
- Rainbow chard
Crispy Roast Pork with Vegies
Prep: 1 hour
Cooking: 2.5 hours
Remove pork from fridge, and brush salt onto the skin of the pork. Leave for an hour in the fridge.
Preheat oven to 220°C.
Roast for 20 minutes.
Reduce the heat to 150°C and then cook for 2 hours.
After the pork is cooked let it rest for about 20min.
Change temperature to 200°C and roast vegetables (spring onions and rainbow chard leaves) for about 7 minutes.
Serve up your pork with roast vegetables, and enjoy.
