Pork and Prawn Rice Paper Rolls

Ingredients

Prawn and pork rice paper rolls:

  • 4 x rice paper sheets
  • 100g x Otway pork belly
  • 80g x cooked prawns
  • 100g x washed lettuce/spinach
  • 4 x sprigs of chives
  • 200g x vermicelli

Sauce:

  • 2 tbsp x Hoisin sauce
  • 2 tbsp x Peanut butter
  • 1 tsp x hot water

Method

Step 1
Bring a saucepan of water to the boil, place pork in the boiling water for 10 minutes. Drain and carefully slice pork belly into 1cm slices.

Step 2
Heat a teaspoon of oil in a pan on medium heat. Sear the pork belly slices (about 1 minute each side until brown and caramelised).

Step 3
Follow the packet instructions to make vermicelli.

Step 4
Mix sauce ingredients together until we’ll combined.

Assembling the rice paper rolls:

Step 1
Fill a shallow bowl with cold water.

Step 2
Dip the rice paper into the water making sure both sides are wet.

Step 3
Arrange vermicelli onto the rice paper.

Step 4
Arrange lettuce and spinach to your liking.

Step 5
Follow with pork belly slices and prawns.

Step 6
Top with sprig of chives.

Step 7
Roll by using both hands and rolling outwards once, fold each side in and then continue rolling outwards.
