New findings reveal the science behind sausage roll satisfaction

The National Institute for Sausage Roll Excellence (NISRE) has released its most important findings to date: the official Peak Sausage Roll Recipe, proven to deliver maximum flavour, flakiness and satisfaction.
After months of rigorous testing, the Institute can confirm that the secret lies in the balance of ingredients – with 38.6% Otway Pork, 30.7% puff pastry and supporting variables including onion, carrot, breadcrumbs and parsley. The results, presented in the Institute’s Pie Chart of Flavour Composition, show that pork is the clear constant in achieving excellence.
But flavour alone wasn’t enough. Researchers also measured the impact on happiness over multiple trials, charting results on the now-published Sausage Roll Satisfaction Curve. Data reveals a sharp spike in satisfaction after consuming a single roll, climbing steadily to 100% joy after 4+ rolls.
“We’ve tested everything from pastry-to-filling ratios to seasoning levels, but this recipe consistently hit the sweet spot,” says Duncan Parry, Vice Chancellor of NISRE Otway Pork CEO.
“It’s the balance of simple, humble ingredients, led by Otway Pork, that creates ground-breaking results. The science is clear: sausage rolls are always better with pork.”
The official Peak Sausage Roll Recipe combines 650g of Otway Pork mince, fresh breadcrumbs, onion, carrot, parsley, egg, BBQ sauce and black pepper, all wrapped in golden puff pastry and served with tomato sauce.
NISRE Lead Research Fellow, Dr Rollins, says the recipe is the closest the Institute has come to defining ‘sausage roll perfection.’
“Our data proves this formula maximises both crispness and juiciness while delivering repeatable results across all test groups,” Dr Rollins says. “The only known side effect is an increased demand for seconds.”
The Institute is encouraging home cooks to conduct their own trials at footy finals parties this season and share their findings.
