A cut above the rest
The main cuts of pork are the Loin, the Ham, the Shoulder (including the butt and the picnic) and the Belly (including the spare ribs and side). From these four main sections comes the full range of pork delights, from easy carve ham and streaky bacon to pork belly and delicious porchettas.
