- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 3 tsp chopped garlic
- Olive oilÂ
Garlic Sauce
- 2 Tbsp apple cider vinegar

Method
Preheat the oven to 170°C (fan forced).Â

Heat olive oil in a pan over high heat. Add the pork loin and sear until golden on all sides.Â
Once the pork is almost seared, shift it to the side, add the garlic, and sauté until golden brown. Pour in the sauce, turn the pork once, and then quickly transfer it to a lined baking tray in the oven.Â
Roast for 15 minutes or until fully cooked. Allow it to rest for 5 to 7 minutes.Â
To thicken the sauce, return to the pan and simmer over medium-high heat for 3 minutes, or until it reaches a desired consistency.Â
Slice the tenderloin and drizzle the sauce over it. Serve alongside mashed potatoes and green beans.Â
