Ingredients

  • Otway Pork Shoulder
  • 1 whole onion (cut in half) 1/4cup white wine
  • 2 cups chicken broth
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Olive oil
  • 4 potatoes (quartered)
  • Salt and pepper 

Method

  1. Preheat the oven to 160°C (fan forced). 

  2. In a large cast iron pot, add olive oil and the pork shoulder. 

  3. Season with salt and pepper, then bring to a simmer. Slightly reduce the heat and pour in the white wine. 

  4. Add the chicken stock and seasonings to the pot, cover with the lid, and place it in the oven for 3.5 hours. In the last 30 minutes, add the quartered potatoes. Finish with fresh thyme and bay leaves on top of the slow roast pork.
