Double Decker Pork Tacos
Ingredients
- 1 tablespoon oil
- 1 medium brown onion, finely chopped
- 500g Otway Pork mince
- 1 packet soft and hard taco kit
- 2 x 125g cans corn kernels, drained
- 10 mini tortillas, heated
To Serve
- Baby cos lettuce leaves
- Chopped grape or cherry tomatoes
- Sour cream
- Lime wedges
- Shredded cheese
Method
Heat oil in a large frying pan over medium-high heat. Add onion. Cook, stirring occasionally, for 3 minutes until softening.
Add pork. Cook, breaking up the mince, for 4-5 minutes until pork is lightly browned.
Add taco seasoning and ½ cup water. Stir to combine. Reduce heat to medium.
Cook, stirring, for 3 minutes until thickened and bubbling.
Stir in corn and ¼ cup taco sauce. Cook for 2 minutes.
Meanwhile, heat tacos and mini tortillas following packet directions.
To serve, place warmed tacos onto a board. Fill with one or two lettuce leaves and pork mixture.
Sprinkle with tomatoes. Top with a dollop of sour cream. Drizzle with remaining taco sauce.
Wrap each taco with a warmed mini tortilla. Serve with lime wedges.
Optional: add sour cream and cheese between the soft and hard shells.
