Double Decker Pork Tacos

Ingredients

  • 1 tablespoon oil
  • 1 medium brown onion, finely chopped
  • 500g Otway Pork mince
  • 1 packet soft and hard taco kit
  • 2 x 125g cans corn kernels, drained
  • 10 mini tortillas, heated

 

To Serve

  • Baby cos lettuce leaves
  • Chopped grape or cherry tomatoes
  • Sour cream
  • Lime wedges
  • Shredded cheese

Method

  1. Heat oil in a large frying pan over medium-high heat. Add onion. Cook, stirring occasionally, for 3 minutes until softening.

  2. Add pork. Cook, breaking up the mince, for 4-5 minutes until pork is lightly browned.

  3. Add taco seasoning and ½ cup water. Stir to combine. Reduce heat to medium.

  4. Cook, stirring, for 3 minutes until thickened and bubbling.

  5. Stir in corn and ¼ cup taco sauce. Cook for 2 minutes.

  6. Meanwhile, heat tacos and mini tortillas following packet directions.

  7. To serve, place warmed tacos onto a board. Fill with one or two lettuce leaves and pork mixture.

  8. Sprinkle with tomatoes. Top with a dollop of sour cream. Drizzle with remaining taco sauce.

  9. Wrap each taco with a warmed mini tortilla. Serve with lime wedges.

  10. Optional: add sour cream and cheese between the soft and hard shells.
